AWARD WINNING WINE
Harvesting in mid-October, when the grapes are ready for longer maceration (3 months) and during fermentation, the delestage technique is used. The wine then settles and matures for one year in wooden barrels. There are notes of cocoa, dark chocolate, coffee in the wine, and we also gently feel ripe forest fruits. The taste is intense but not too heavy, and the aftertaste is nicely rounded and long with gentle tannins. You could say that Sophia is the queen of meat specialties, but at the same time we can enjoy with her when we sweeten ourselves with strawberries covered in chocolate.
